The Abundantly Lazy Meets Late-Night Dinner

Ever have one of those nights where you just happen to forget about dinner? Us, too (though probably more often than some).

On this lazy Wednesday night, last-minute dinner comes to us straight from Caveman Keto. So for all my friends out there living that Keto and any other carb-free lifestyle, this recipe is right up your alley! And, to be frank, it’s downright delicious… not to mention a snap to make for my fellow beginner cooks.

My friends, I present to you: cheesy jalapeño-stuffed chicken breasts! These things were so good, the shame of not sharing would have haunted my bloodline through the generations.

Cheesy Jalepeno Chicken Breasts

Step One: Preheat your oven to 350 degrees. Take your chicken breasts & slice them down the middle. Open lengthwise in what my chef-in-the-making mind calls “hot dog bun style.”

Step Two: Cut your jalapeño(s) into thin slices. For two chicken breasts, I needed only 1/2 a pepper and it had one heck of a kick! Remember: the real punch behind a jalapeño pepper’s spice is in its seeds, so only use as much as you can handle!

Step Three: this is the point at which I started getting super pumped for this meal. Place your jalapeño slices on the open slice of chicken and add a plentiful amount of cheese. I used cheddar, but cheese is one of those wonderful things to try and experiment with so why not go crazy!

Step Four: Ah, the old fold-and-wrap. Fold the top of the chicken over the cheesy jalapeños, sprinkle with salt and pepper and wrap those suckers closed with some nice slices of bacon. Stand back and appreciate the goodness before you.

Pop those suckers in the oven on a non-stick or foiled pan & bake at 350 degrees for 35-45 minutes. If the chicken is done before the bacon crisps up, have no fear. Simply broil for a few minutes to get that perfect bacon crisp.

Step Five: Serve with your favorite sides and enjoy!

Ingredients
2 juicy, meaty chicken breasts
salt & pepper
4 oz. cheddar cheese
2 oz. jalapeño slices
4 slices bacon

Steps

  1. Preheat your oven to 350 degrees. Slice chicken breasts lengthwise and add jalapeño slices and cheese to middle.
  2. Close the top of the chicken slices and sprinkle with a dash of salt and pepper. Wrap bacon to secure the goodness within.
  3. Place chicken on non-stick or foiled pan and bake at 350 degrees for 35-45 minutes. Broil for a few minutes after to crisp up bacon.
